I'm thinking about trashing my current setup for an: in house, always on, home brew, plex server and seedbox. Ideally I'd like to have it powered by a Raspberry PI due to the extremely low power consumption and resulting overhead costs. I don't plan on doing any transcoding, and the plex server won't be hosting more than one streaming device at a time. Most of the media being streamed will be 1080. Does PI 3 have enough computing power to do this?

Simple answer, ABSOLUTELY! Even better, just released in March is the Raspberry Pi 3 Plus, with faster WiFi and Ethernet. It should also be very easy, just look into GITHUB, there are quite a few Plex projects where someone else has already done most of the work for you, and you just have to finish it up for your own specifics.
