Plex is very simple only a few commands and it's in.. Then tunnel in to link your plex account to it

Also the KS2 does not have the CPU power to do smooth trans coding

I have the same as you, a kimsufi 2tb ks2. When running plex on it I found it really struggled with HD. that cpu just isn't strong enough. I would recommend upgrading to a stronger processor if you want to have a pleasant experience.

I have a KS-3 which has a Core I5-750 and 16GB ram and it works just fine. Maybe think about spending these 6 euros more.

With Atom you can forget Plex and HD, it needs a lot more powerful processor to transcode video. Even when using subs, you need transcoding.

Can I avoid the setup fee on Kimsufi server ? I am interested in KS2 for setting up a seedbox :)
