Yes if sound is being played and you hit record it will save whatever you record as a mp3.
Of course videos that have audio will record both.
When you hit record.
If you want to extract the audio out of a video file you can do it like this:
It's similar to step 6.
Open up VLC.
Go to Media > Convert/Save.
Hit add and find your file.
Hit Convert/Save
Then under profiles choose Audio - MP3 or whatever audio you want.
(You may need to click on the options button next to profiles and change the encapsulation to WAV)
Then hit start.
