use sharepod to remove content from iphone it doesnt need itunes
anf if putting it in dfu mode doesn't work then restore
try jailbreak after content is removed then either us sharepod to put it back or itunes
if the phone was jailbroken, and ssh server active, then i think you can access the files via ssh. unless changed, the user and password should be same as default which is root/alpine or something like that, google it.
but not sure if you can reset the passcode, but you might be able to recover some of the files, then do a recovery and restore the files.
