Since I was looking this up for a while ago I took myself time to post a small tutorial about how to get sound for your ps3 while using a screen with hdmi and no speakers supported on it:
Solution 1: Play the sound via your computer
Req:
-A screen without sound support(such as speaker support on the screen, else this tut would be useless)
-2x RCA Phono Female to 1x 3.5mm Hane Jack Audio Adapter, for example this one.
-Standard ps3 SCART cable, such one as this.
Howto:
1: Connect the ps3 to your screen via HDMI
2: Connect the scart caple to your ps3 and the white cable on the scart to the white input port on the RCA audio adapter (same with the red cable)
3: Connect the adapter to your pc input port on your moderboard on your pc.
4:Open up your Audio Control on your computer and put the playback volume up from zero(if it was at zero)
5: Start up your ps3 and go to settings for sound and change the sound options to SCART.
6: Enjoy.
Note:
This may be usefull if you wish to play on your ps3 and at the same time be online on skype to speak with your firends, since ps3 obv doesn't have skype support. Or llistening on own music while having the ingame voices from the game on and the game music turned off.
Solution 2: Computerless solution
Req:
-A screen without sound support(such as speaker support on the screen, else this tut would be useless)
-2x RCA Phono Female to 1x 3.5mm Hane Jack Audio Adapter, for example this one.
-3.5mm Coupler Adaptor Stereo Jack Female Audio Joiner Connector, such as this one.
-Standard ps3 SCART cable, such one as this.
Howto:
1: Connect the ps3 to your screen via HDMI
2: Connect the scart caple to your ps3 and the white cable on the scart to the white input port on the RCA audio adapter (same with the red cable)
3: Connect the adapter to the Audio Joiner and your headset on the other side.
4: Start up your ps3 and go to settings for sound and change the sound options to SCART.
5: Enjoy
Note: if you want support for your mic on your ps3 for ingame chatting on multiplayer games do this:
Extra Solution: Mic support
Req:
-An USB Soundcard such as this.
-All the Req in above method
Howto:
Go to "Accessory Settings > Audio Device Settings"
Replace "InputDevice" distilled USB sound cards. Replace "InputDevice" to your USB sound cards.
Leave the "Output Device" "System Defult Device" Leave the "Output Device" "System Defult Device"

Edit: lol forgot to mention to put the mic cable into the usb soundcard :P
Note:
For those of you who do not have a PS3 Slim model, you must also set so that the use of your AV cable to get any sound: Sound Settings > Audio Input Connector / SCART / AV Multi
For those of you with PS3 Slim, its enough to set on "Audio Multi-Output": Sound Settings > Audio Multi-Output> ON
