Christopher Moore is mine.
He just has such a great writing style, can be really funny and highly offensive at the same time.
Any doubts, look at "Lamb: The Gospel According to Biff, Christ's Childhood Pal" and you will see what I am talking about...
There are very few authors that can have me hooked by the first page.
It was Storm Constantine for years... Then the Harry Potter books came along and blew me away. But nowadays I think the author I've been reading that most consistently writes stuff I like is Ursula Le Guin.
I like Dan Brown. You can say the stuff he rights about is untrue or crap, but I personally like all of his books.
I like Terry Pratchett. Discworld is an awesome series (although the first few books weren't great), and I highly recommend reading the whole thing if possible (yes, it is over 30 books. I read the whole thing in two years, and it was worth it). The genre is fantasy with a little bit of sci-fi.
Stephen King. He writes good horror stories that are interesting and keep you on the edge of your seat - Carrie is a good one, so is Firestarter.
I like James Herbert and Jack Kilborn for horror. Also a big fan of Chuck Palahniuk's books, but they're not for everyone.
Mine is Jules Gabriel Verne, a visionary that is one of the pioneers of the Science Fiction genre; but I always wonder why his writing is consider today Science Fiction when he wrote about space, air, and underwater travel before navigable aircraft and practical submarines were invented, Science Fiction yesterday; a reality today...
