1 - The Green Mile
2 - Pet Sematary
3 - Salem's Lot
4 - Carrie
5 - IT
I think it depends what kind of stories you prefer...horror? thriller?
For me I'm more of a fan of thriller then the horror part and the build up of the stories.
I prefer his short stories but the whole Dark Tower series is rather epic.
If I had to pick 5 that were not short stories or Dark Tower...

I don't think he has really ever made a bad book, Now my friend who doesn't really read would not be someone I give the Stand to, but Night Shift would be a good "get to know" Stephen King book.
I would also suggest The Bachman Books (Rage, The Long Walk, and The Running Man).. also Salem's Lot is really good..
