Yes, you need to blank out the information in your proof. Otherwise, you risk loosing your account if someone from the tracker saw your proof. As to what you need to blank out, your user name, your bonus points, your upload and download amount except the first digit, and your ratio except the first digit. You should also blank out any other user names visible that aren't your own, as well as how many messages you have in your inbox.
Generally, anything that can put your account at risk, you should blank,
it is necessary. editing your proofs will add a level of protection for you and the people you invite or get invites from from getting banned. most trackers think we are all cheaters and traders in here, so if they find a proof with exposed username in it, they will start cutting some strings. though we have strict policies agains such misdeeds (trading & cheating) and take hard actions against those who get caught, we still don't get the approval from trackers.
it's weird though. we are not traders but they, giving away invites or accounts to those that donate, seems to have double standards or something...

There are some tips for editing ratio proofs in the Area 51 Giveaway Guide. Basically, you want to obscure or cover up any information that a tracker could use to identify you. Usually this means just leaving the first digit of your upload, download and ratio visible. And covering any other personal information up. Especially obscure your tracker username. And a distinctive avatar would another thing to watch out for.
All of this is done of course to protect your tracker accounts.
Note that a profile link, which is a lot less common does not cover anything up. So don't send profile links to someone that you don't trust. I would usually trust tracker staff, but it's up to you to decide if you want to provide a profile link to someone that you don't really know on a GA. Profile links are more common for rare tracker invite GA's.
