Well a typical movie or video has several different components e.g. video, audio, subtitles.. These are combined together into a mutiplex or mux. A remuxer assembles those different streams: audio, video, etc back into a single multiplex. The reverse step is called demuxing.
An encoder prepares video for playback by converting it to the desired format. You can encode video at different quality levels or sizes or to various standards. Some consideration include resolution and bitrate, file formats e.g. mpeg-1, mpeg-2, h.264, xvid and media formats e.g. DVD, VCD.
