Ok, so I did a little googling and found what I think are two good ones that may work for you - although I'm not positive. I also found one other place that seem to do just summer courses that may be interesting for you. But either way, here are the below links:
- Folkuniversitetet (this one looks the best)
- University of Gothenburg
- GLOSSA (this is the summer course one, but it has from beginner to advance lessons)

Oh man, I was in sweden last year for just a few days and loved it. There are some things I'll share about learning, living, and hopefully loving in sweden.
First, I'd suggest SFI (Swedish for Immigrants). It's offered for FREE to anyone who lives (or has an address) in sweden. If you can swing it you should go there, rent for a few months and learn at the highschool.
If you do not have any previous knowledge of Swedish, you will need to get a basic education. If you are registered in a Swedish municipality and aged above 16, you can apply to SFI, Swedish for Immigrants, which is arranged by the municipality. This education is free of charge.
You apply to SFI in the municipality where you are registered. If you are registered in the city of Stockholm, you apply by going in person to Vuxenutbildning Stockholm at Hornsgatan 124, Sfi 3rd floor. There are courses at different levels so you take a test to see at which level you should start. You also choose at which school you wish to study.
Bring your civic registration certificate and an ID (for example your passport) when you apply. You can order the civic registration certificate from the Swedish Tax Authorities (Skattemyndigheten) phone: 020-567 000 or at Startsida | Skatteverket [NS4 version].

Once you have level one you're ready to start studying at the university level.
Stockholm University – Swedish as a Foreign Language
If you have previous knowledge of Swedish, you can study Swedish as a Foreign
Language levels 2 + 3 at Stockholm University. Level 1 is only for visiting and exchange students or the equivalent.
The requirements for level 2 are:
* Foreign education that fulfills the requirements for studies at the university level in your home country (completed upper secondary education)
* Basic qualifications for studies at the university level in Sweden, except the requirements for knowledge of Swedish and English
* Previous knowledge of Swedish corresponding to one term of full-time studies. Assessed in a test.
