Not a book but I've always used Adobe Illustrator and vector tutorials, from beginner to advanced | Vectortuts+
Tuts+ is probably the biggest tutorial/learning network on the internet. They have loads of other sites worth checking out too, PSDTuts, WebDesignTuts, NetTuts etc
If you're after a theory book, at uni we were recommended Computer Graphics by Foley and Van Dam... One sec, I'll find a link.
Computer Graphics, reissued 2nd Ed.: Amazon.co.uk: James D. Foley, Andries van Dam, Steven K. Feiner, John F. Hughes: Bookss far as I remember, it was very good. Then again, I haven't read any of it since 2004.
